Lazy Cooking

I love to cook, but often I don't have enough time to spend hours and hours making one dish. So I've found some "lazy" ways to make family favorites. It might not wind up quite the same as the original, but it's usually pretty good.

Share some of your cooking shortcuts here--or warn us off ones that just don't work.

I modified this Spicy Orange Chicken. The recipe at the link reflects the changes. The original called for batter-dipping the chicken pieces and deep frying them. The lazy version calls for dipping the chicken in flour and a simple saute.

Bought some lean ground beef found it to dry as hamburgers so tonight just added bread crumbs and egg and made meat balls. Cooked it in a corning ware covered dish for eight minutes in the microwave added tomato sauce.The four hamburger became eight meatballs enough left for lunch tomorrow.

Good job saving the hamburger meat, Sueanne

Tonight's dinner will be Taco Skillet. I keep bags of cooked hamburger in the freezer just so I can make dinners like this.

It's easy to cook a whole pack of burger at once. You can put it in a large pot and boil it, then drain--or I've just cooked it in a large saucepan without any water, stirring frequently, then drained. That second way preserves more of the flavor without taking extra time or trouble.

There some left over rice in the house so I improvise making fried rice...

pre heat nonstick frying pan with one tsp of oil saute garlic with onions. Watch the onion if its started to turn brown then put on the rice. Stir it frequently to even the frying. On other pan fry some minced pieces of shrimp and hotdogs. when the rice is starting to taste a bit crunchy put on the shrimp and hotdogs toppings. then mix them all up. and serve.

I found that just changing the minced (ground) meat it can change a dish.
Spaghetti works just as well with chicken mince or even port or veal as does meat balls, hamburgers and to be honest most minced meat recipes.
I love lasagne with chicken mince and veges for a change

We are big potato eaters and I have found that I can bake, so far I have done 16 potatoes at a time, in my pressure cooker in 16 minutes! It really saves time, energy and they taste really good. I have fried them, stuffed them and last night, potato salad. Gotta love them potatoes! and the pressure cooker!

As You know we love zucchini. Tonight I grated one zucchini with one small onion added two eggs with a little milk and a little over one cup of flavored breadcrumbs. Added one tablespoon of corn meal for crunch. Shaped them up into about five patties. Cooked them in enought olive oil to coat the pan. Sprinkle the top with paprika for a nice color.Turned them over to brown.

Had these with leftover pieces of chicken legs deboned from the soup heated up. Got two meals from the four chicken legs I made soup from a couple of nights before. The zucchini are so good you don't care that you are eating them with leftovers.

I'm going to try doing that with Zucchini. Sounds good and quick to make. Maybe I'll add some cheese to this also. ......Ladies, good ideas.
