New ideas or recipes for Sunday football/tailgating?
Do you plan on cooking new recipes for the games this year?
Do you have old favorites that you rely on?
I'm searching for some new ideas for easy meals for watching the games at home.
I'd love to hear what you have planned.

Tonight we are having tacos and Spanish rice.

I made tacos and Spanish rice on Sunday. I've been fighting a bad stomach virus that sent me to the doc. He put me on meds + the B.R.A.T (boring!) diet. I lasted until Sunday but then gave in and ate tacos. I was fine through it but I still feel like I'm only 1/2 over it. I'm soooo sick of being sick!
I have Italian hoagies and wacky mac pasta salad planned for this Sunday. We might make homemade bagel bites for an early snack.

2 10 oz. cans Hungry Jack Flaky Biscuits
5 sl cotto salami; cut into quarters
5 sl cooked ham; cut into quarters
5 sl cooked turkey; cut in quarters
5 sl Swiss cheese; cut in quarters
1/3 c red onion; thinly sliced
1/2 ts poppy seeds; optional
Instructions
Heat oven to 400 F. Press or roll each biscuit into 4 inch round. Place 2 pieces of each type of meat and 2 pieces of cheese on each of 10 biscuit rounds. Top with onion. Top with remaining biscuits; press edges together to seal. Prick tops of biscuits with fork; sprinkle with poppy seed. Place on ungreased cookie sheets. Bake at 400 F. for 9 to 14 minutes or until golden brown. Let stand 3 to 4 minutes before serving. Cut each in half to serve. Yield: 20
I'm going to cut the recipe in half, and use layered thinly sliced deli meats. I also plan to use pepper jack cheese, because that is what I have in the fridge, and because I think it will give a little more kick to these. I am going to half them as I serve them ... I think they'd be easier to heat up again whole rather than halved??
Anyhew ... that's about it. I look at this as kind of a "base" recipe that you can adjust to suit your family's own tastes.

My tailgating is done during NASCAR season but it would work for football too. I have to make sure my family is fed so that my race won't be disturbed. Here are some things I do:
Make quesadillas. I take tortillas, add shredded cheese, jalapenos, leftover chicken or other meat, and top with more cheese. Cook in lightly greased pan on low on both sides until cheese melts.
English muffin pizzas. Everyone can top their own they way they like. You just put the toppings in little bowls and cheese in a large bowl.
Rotel cheese and tortilla chips are always a fave.
I try to double and triple casserole recipes. On race day (during football season, that could be game day) just pull one out of the freezer and viola--dinner cooks itself! Same thing for crockpot recipes. The family can wait on themselves.
If tailgating, you can have burgers on a disposable grill. Tailgating is fun because others usually share. You can grill pineapple slices, burgers, onions, and so on. Keep an ice chest of soft drinks, potato salad, and macaroni salad. Chips don't have to be refrigerated.

I like the idea of doing quesadillas. I think that I will look for a roast for the crockpot for next weekend. We can have quesadillas during the game and then soup or Shepard's pie for dinner later that night. Thanks, DeBora!

I have fish thawing in the fridge to make Asian broiled fish for dinner tomorrow so I think that I will just pick up some egg rolls to eat beforehand.

Here is a good "dip" for fruit. Works well at a tailgate or at home watching sports.
CHOCOLATE CARIBBEAN FRUIT DIP
2 - 8 oz pkgs. fat free cream cheese 1/4 cup Nestle Quick (sugar free if you an find it) 1/4 cup hot coffee 2 tsp coconut extract 2 tsp rum extract 2 tbsp Sugar Twin 1/2 cup Cool Whip fat free
In a medium bowl stir the cream cheese till soft. Add Nestle Quick, coffee, coconut extract, rum extract, and SUgar Twin. Mix well to combine. Blend in Cool Whip. Refrigerate at least 30 minutes. Genly stir again right before serving. Great with apple and pear slices, and even chunks of fresh melons. Serves 8 (1/3 cup per serving)
