First of all, especially if there are children attending this dinner, you can't go wrong with a
raw vegetable platter. Carrots, bell peppers in different colors, maybe some broccoli, cauliflower or cucumbers, and celery with some ranch dressing or other favorite dip is always a hit. Best of all, you don't have to use the stove to get that prepared!
A crockpot full of
baked beans is unusual but tasty. Kids don't always like stuffing, but they usually enjoy baked beans. Here's a favorite recipe of mine:
Dr. Pepper Baked Beans.
Pickled Beets are an easy cold dish that travels well. Double this recipe for a Thanksgiving crowd:
PICKLED BEETS
2 cans sliced beets, juice reserved from ONE can
2/3 cup sugar
2/3 cup white vinegar
1/2 tsp cinnamon
1/4 tsp cloves
Mix juice, sugar, vinegar and spices in a saucepan. Stir over low heat until everything is mixed. Add beets and simmer 20 minutes. Chill until ready to serve.
And green vegetables would be a good addition to the menu you listed. Of course there's the tried and true
Green Bean Casserole. Here's a l
ow carb version.
Or why not try
Peas Rustica or
Asian Green Beans?
