| Cowgirl Casserole (breakfast)
Cowgirl Casserole 350*
Ingredients:
Cooking spray
1/2 lb ground sausage or link sausage cut into
small pieces (optional if you don't like
sausage)
1/2 lb bacon, cooked, drained, crumbled
12 oz. frozen hashbrowns
1 green bell pepper, seeded and chopped
2 TBL chopped green onions
2 c shredded cheddar cheese
1 c bisquick
3 c milk
4 eggs, slightl;y beaten
S & P to taste
Directions:
Spray a 13x9 inch baking dish.
Combine sausage, bacon, hashbrowns, green pepper, onions, and 1 c cheese. Spread into the baking dish.
Whisk together the bisquick, milk, salt, pepper and eggs until well blended. Pour over the potatoes. Sprinkle with remaining 1 c cheese. Cover and refrigerate overnight. No longer than 24 hours.
When ready to bake, remove from refrigerator and bake for 30-35 minutes at 350*. Let stand 10 minutes before serving.
