DeBora4BobbyL originally posted this recipe in What's for Dinner March 2009.
Rice Beef Roll Ups
3/4 cup cooked brown rice
2-3 tablespoons chipotle raspberry marinade (or any sweet and sour type sauce)
2 T shredded carrots
Thin slided deli roast beef
Mix everything except the beef together. Put a portion of the rice mixture on a slice of beef. Use the beef as you would for a wrap.
I also shredded up some of the not so good pieces of beef and just made a salad with the mixture. I added the beef to the rice and put it in a bowl. I like the chipotle raspberry marinade because I like the sweet with the spicy flavor. I got the original recipe from Parents.com. I just mixed in enough of the marinade to make the rice mixture to the consistency that I liked. This is a great recipe for kids for lunch or snack. You could also make the salad and place in a tortilla or wrap. You can also add avocado to this as well.
