Bacon, Egg and Vegetable Rolls
2-3 sheets prepared puff pastry
2 cups total of chopped cooked vegetables
(potatoes, peas, corn, carrot, any left overs)
4-6 rashers of chopped bacon
1/2 chopped onion
1/4 cup grated cheese
1 egg
Salt pepper to taste.
Chop bacon and onion and pan fry till just golden, put aside to cool.
Mix chopped veges, cheese, egg and seasonings, adding bacon and onion last when cooled.
In a strip in the middle of the pastry put the vege and bacon mix.
Fold each side over and roll onto a pastry sheet pinching the ends.
Repeat until you run out of veges.
Will make 2 to 3 pastry sheets it depends on how big your veges were chopped.
Brush with milk or egg wash and bake for 15-20mins until browned on 200*C.
