1/4 cup warm water 1 pkg. active dry yeast 1 TBSP. sugar 1 TBSP. olive oil 1 tsp. kosher salt, divided 1 cup brown ale, room temperature 3 3/4-4 cups all purpose flour 2 cups hot water 1 tsp. baking soda 1 egg, beaten 2 TBSP. butter, melted
Place warm water in bowl and sprinkle with yeast. Let stand 5 minutes. Add sugar, oil, and 3/4 tsp. salt, ale, and enough flour to make soft dough. Place dough on lightly floured work surface and knead 6-8 minutes until smooth. Place in lightly greased bowl and cover. Let rise until doubled in size, 45-60 minutes. Punch dough down and divide into 12 pieces. Roll each piece into rope abdout 20 inches long and shape into pretzel shape. Combine hot water and baking soda in pie plate. Dip pretzels into solution, place on lightly greased baking sheet, cover and let rise in warm place 15-20 minutes. Brush with egg, sprinkle with remaining 1/4 tsp. salt. Preheat oven to 425 and bake 12-15 minutes. Brush with melted butter and serve immediately!!!!
