 Stuffed Cuke Rounds
STUFFED CUKE ROUNDS 1 large cucumber 3 oz. cream cheese, soft 1 TBSP. crumbled blue cheese 2 tsp. minced parsley fresh 1 tsp. minced dill fresh 1 tsp. grated onion 20-26 pimento strips dill sprigs Run the tines of a fork lengthwise down the cucumber. Cut a 1 inch slice from each end. Cut cucumber in half lengthwise, remove and discard seeds. Place cucumber cut side down on paper towel 10 minutes. Combine other ingredients and spoon into cucumber halves. Put halves back together and wrap in plastic. Refrigerate 4 hours. Remove and cut cucumbers into 1/2 inch slices and garnish with slice pimento and dill sprigs.
