When boiling eggs, if you put a little salt and some oil in the water the shells of the egg will peel off real nice.

You should not rinse pasta. The sauce sticks better to unrinsed pasta.

When baking a potato, if you are short on time, use a potato nail; it conducts heat into the inside of the potato and shortens cooking time.
I reached for my potato nails the other day, and they were gone!! So I got out a couple of skewers with a flat side. I stuck one through each potato, and discovered they make a wonderful handle - I could brush the margarine on them, roll them in salt, and not get my hands gooey! The skewers worked as well as or better than potato nails!

I watch my salt intake. If I cannot find fresh veggies...I buy frozen (plain). If I have to use canned veggies, I rinse & drain them, and heat in the microwave for a minute. I hate paying extra for salt free canned veggies.

To keep bugs out of your flour, oatmeal and cornmeal, put it in the freezer, or put a stick of mint gum in the package and keep in your cupboards.

I use the middle rack of my oven for baking and roasting, and move the rack to the top for broiling. It works for me and everything comes out fine. I have never used the lowest rack setting for anything.

When it comes to storage, I know those egg holders in your fridge seem handy, but I keep my eggs in their carton. Otherwise, they can absorb the smells of other foods. It's also best to store them in the main part of the fridge, where the temperature will remain the most consistent.

If your child is allergic to eggs, or doesn't like eggs, or just for fun try this. Take a bag of large marshmallows and let the kids decorate the marshmallows instead of Easter eggs. One way is to quickly dip the marshmallow into water mixed with food coloring. Let them sit for a minute; they will become sticky. You can roll them in sprinkles, colored coconut flakes, orcolored sugar granules. Instead of the dipping process you can also just color them with food decorator pens. They sell different types of these pens in the baking aisles of your local supermarkets. The kids can make different pictures, or faces. Writing their name is also fun.

If separating eggs, don't separate directly into the whites or the mixture. If the yolk is delicate and breaks, it can ruin the stuff you are making - the whites won't whip up and the mixture may not cook properly.
