Anna, They dry them 24 hrs on tables with table cloths on and have fans running at each end of the hall and they flip them over after 12 hrs. It is an amazing site to see 90-100 lbs of noodles laid out in the hallway.

If they are for the festival or church dinner they just store them in clean egg cardboard boxes lined with white table clothes. If they are for sale which is what they are making them now for they put one pound in a plastic zipper bag. They sell them every fall by pre-orders and have been making them the last several weeks so I'd guess they had orders for 300 pounds or more. Which will be a nice little bonus for the church's general fund.

I did find out why my noodles never looked like church's, they put a little bit of yellow dye in with the eggs which makes them much nicer looking.
