Five Flavor Chicken

3 lbs. boneless skinless chicken breast halves
1 1/4 inches fresh ginger root, peeled and finely chopped (I didn't have it, so I used 1/2 tsp ground ginger)
2 cloves garlic, minced
1/2 cup soy sauce
1/2 cup honey
3 Tbsp dry sherry (I didn't have it, so I used chicken broth)
2 Tbsp corn starch

Mix ginger, garlic, soy sauce, honey, and sherry (or broth) in a small bowl. Dip chicken pieces into sauce; place chicken in crockpot and and pour remaining sauce over it. Cover and cook on low for 6 hours.

Remove chicken to serving dish and keep warm. Pour juices into skillet. Blend corn starch with a little of the cooled sauce, then whisk into skillet. Cook over low heat until thickened. Pour a little sauce over chicken and pass the remainder.
