My recipe is so simple. The amounts will vary of course depending on how much you are making.

You need:
potatoes
flour
salt & pepper
milk
butter
onions
bacon

Fill a large kettle about 1/2 way with cold water.
Peel and slice potates and place in the water.
Chop the onions finely.
Cut the bacon into small dice.
Layer-
potatoes, onions, bacon salt & pepper
Do this until the baking dish (or roaster) is almost full.
Make a rue from butter, flour and milk. Melt the bettur in a sauce pan, add flour, starting with 3-4 tablespoons. If the flour makes a stiff ball add more butter. You want a nice paste but not stiff. Slowly add the milk, continuously stirring. When it is thickened pour over the potatoes, moving potates aside so that it seeps down around them.

Bake at 350* until potatoes are tender.

A quicker method is to layer it like this-
potatoes, onion, bacon, salt & pepper, small dots of butter here and there, the sprinkle with a spoon of flour. Repeat until dish is almost full. Pour milk over, cover with foil if desired and bake 350* until tender.

If you make them, let me know how you like them.
