| Breaded Chicken Cutlets Tonight I made chicken cutlets, escarole, stringbeans & corn on the cob. Had watermellon for dessert.
The cutlets were so good. I cut the chicken cutlets in half so they are thinner. Coat them with bread crumbs first than dip in egg then bread crumbs again. They come crisp on the outside tender in the inside. Cook in a fry pan turning a few times so they don't dry out. Cover at the end to make sure they are completely cooked inside.
