Chicken Log with Gravy

Bilby originally posted this recipe in What's for Dinner January 2009.

CHICKEN LOG WITH GRAVY

1 ½ - 2 cups cold, cooked chicken (roughly chopped)
1/2 finely diced onion
1 Tbsp. minced chilli (optional)
1/8 tsp. paprika
Salt and pepper to taste
Prepared chicken gravy

Mix all ingredients, using just enough chicken gravy to bind together.
Make a rich biscuit dough (below) and roll to 1/3” thickness.
Spread the chicken mixture and roll like a jelly roll.
Bake at 400F deg, 20 to 25 minutes.
Serve in slices covered with hot gravy and veges or cold with a salad and tomato sauce.

Rich biscuit dough:

2 cups flour
4 tsp. baking powder
½ tsp. salt
¼ cup shortening
¾ cup milk
Combine ingredients in order given and mix biscuit dough in usual way.
