Chicken Casserole Recipe
2 cups of cooked chicken diced
2 cups of celery, chopped (to taste)
1 cup mayonnaise
3 tbsp. chopped onion (opt.)
2 tbsp. lemon juice
1 cup Cheddar Cheese, shredded (to taste)
1 cup Potato Chips (to taste)
Cook chicken, celery (little bit). Combine cooked chicken, celery, mayonnaise, onion and lemon juice. Put in 2 quart casserole dish. Sprinkle shredded cheddar cheese on top. Cover with 1 cup crushed plain potato chips. Yummy and oh so easy, great way to use leftover chicken next day!
