We have a big treat on Christmas Day. I get a beef tenderloin on sale and cook it as a roast. I make sure to get one large enough so we get a second meal out of it. (The kids call this "Christmas meat" because that's the only time they get it!)

Then after dinner I immediately freeze the leftovers before Big DS gets his mitts on it for a midnight snack

We will enjoy a nice dinner of Beef Paysanne soon.
