Vegetarian Crockpot Stuffed Zucchini

I have been looking through my recipe box and forgot all about this on..I make it in my large crockpot.

2 med. Zucchini, or summer squash, Halved and seeds removed.
2cups tomato sauce
2Tbs, red wine or balsamic vinegar
2 sm onions,chopped
2tsp chopped garlic, or to your taste.
1/2 cup UNCOOKED brown rice
2 tbs, dried parsley, basil
2 Tbs Pine nuts(toasted)
1/4 tsp pepper
Mozeralla cheese, Parmesan cheese
(if desired)

Toast pine nuts in a nonstick skillet for about 5 mins.
Place the halved zucchini in the bottom on the crockpot.

In a small bowl mix tomatoe sauce and vinegar.

In another bowl, combine the onion, garlic, rice, parsley, basil, pepper, along with 4 Tbs of the tomatoe sauce and vinegar mixture.

Fill the zucchini halves with the rice mixture.Top with the remaining sauce,and cook for 4-6 hrs on low, or until rice is tender.

Garnish with toasted pine nuts, & cheeses.
You may omit cheese if you do not eat dairy.

This makes 4 main dishes or 8 side dishes.
