I made my first totally homemade pumpkin pie last year and I cut the pumpkin (a "milk" pumpkin, the flat, light skinned kind) in a bunch of big chunks, then cooked it in my pressure cooker. When it was done, I just pulled the skin off and put the pumpkin in the food processor until it was smooth like baby food.
It was the best pumpkin pie I've ever had, and I got a lot of compliments on it from my DH's extended family.
