Good Morning all, and TGIF!!!

Hope you all are doing good today. And ready for a relaxing weekend!!!

Dinner will be out tonight, just not sure where.

Here is a yummy recipe for dinner!!! Enjoy!!!

Chalupa Casserole


INGREDIENTS:

1/2 cup chopped onion
2 Tablespoons vegetable oil
2 pounds ground beef
1 cup water
3 Tablespoons chili powder
2 Tablespoons flour
1 (10-ounce) can tomato soup
1-1/2 cups shredded cheese
1-1/2 cups light cream
Salt to taste
12 flour tortillas

TO PREPARE:

Saute the onion in the oil in a skillet until tender. Add the ground beef. Cook until the ground beef is brown and crumbly, stirring frequently; drain. Stir in the water, chili powder and flour. Cook, covered, for 15 minutes, stirring occasionally. Stir in the soup, cheese, cream and salt. Remove from heat.
Cut the tortillas into strips. Layer the tortilla strips and ground beef mixture 1/2 at a time in a greased baking dish. Bake at 325 degrees for 25 minutes or until bubbly. Serve with chips and a crisp green salad. May be prepared in advance and stored, covered, in the refrigerator. Bake just before serving.
