Wow, December already! Hard to believe. Here's the recipe I tried for dinner last night. It was just what I wanted and was very good. Most of you probably make something like this already, but I just stumbled on this version in one of the mystery novels I read that also includes recipes. My son has always laughed when I try those recipes. "Mom, it's a MURDER mystery, are you sure you want to try that?"

Anyway, here it is:

CHICKEN AND BROCCOLI DIVAN


2 cups broccoli, cooked and cut up (I'd recommend slightly bigger than bite-sized, microwave for about 5 minutes to cook)
1 1/2 cups cubed chicken (I used two chicken breast halves, sliced crosswise and sauteed in a little bit of oil until just done)
1 can cream of chicken soup (you can use your favorite "cream of" soup)
1/3 cup milk
1/2 cup shredded cheddar cheese
1 Tbsp. melted butter
1/4 cup dry bread or cracker crumbs (I used Panko, my new favorite bread crumb product)


Arrange broccoli in a shallow casserole dish (I nuked it right in this dish) and top with chicken. Combine soup and milk and pour over chicken, then sprinkle with cheese. Combined melted butter and bread crumbs, then sprinkle on top.


Bake for 15 minutes at 425°.
