Ever heard of chocolate covered needhams? There's alot of recipes on the internet for this delicious candy- the base of it consisting of shredded cocoanut and mashed white potatoes. You could even use other types of candy coating for variety (Melted White Chocolate, Mint chocolate, ect)
I've also heard of potatoe bread and dinner rolls- also a possibility.
