| Brownie Mix
This one I haven't tried myself.
4 c sugar
2 c flour
1/3 c unsweetened cocoa powder
2 tsp baking powder
2 tsp salt
1 c shortening
Sift all dry ingredients in a bowl. Cut in shortening and put in an airtight container.
To use from mix: Put 2 eggs and 1 tsp vanilla in a mixing bowl; beat slightly. Stir in 4 tbsp melted butter (cooled, hot will cook the egg!). Spoon in 2 cups of the brownie mix. Beat with a spoon until somewhat smooth. Spread into a greased and floured 8x8 square pan, bake at 350 F for 30-35 minutes.
