Wiggly Watermelon

Fool your kids and watch them giggle at the site of this wiggly watermelon treat! The rind of a halved and hollowed watermelon provides the perfect vessel for this light summertime dessert.
Wiggly Watermelon
What you need:
1/2 large watermelon, flesh removed so only rind remains
4 6-oz (large( boxes cherry or strawberry gelatin
5 cups water*
1/4 cup mini chocolate chips
*DO NOT follow the water instructions on the gelatin box or your "watermelon" will not hold its shape.
Author's note: this recipe is for one half of a large watermelon. If you want to use both halves, double the gelatin and water.
Editor's Note: You can also purchase watermelon flavored gelatin for this fun recipe!
What you do:
Cut the watermelon in half and scoop out the flesh and seeds with a melon baller or spoon. Make sure to get all the way down to the green rind. Stand the melon on its end. You may have to shave a little bit off the bottom to get it to stand upright, just don't cut all the way through and make a hole in the rind.
Boil water, add the gelatin and mix well. Pour into prepared melon rind.
Place in the refrigerator. When mixture is firm but not completely set, push mini-chocolate chips into the jell-o with a chopstick or skewer. Let set completely in the fridge.
When ready to serve, slice with a sharp knife and enjoy!
