  Chewy Cranberry Oatmeal Raisin Cookies

The scent of oatmeal raisin cookies wafting through the house is a sure sign that fall is on its way! Greet your kids after school with a plate of warm cookies and a big glass of milk. This will surely put smiles on their faces.

What You Need

1/4 C. sour milk (1/4 C milk + 3/4 tsp vinegar)
1 C. shortening
1 C. sugar
2 eggs
1 tsp vanilla
1/4 tsp salt
1 tsp. baking soda
3/4 C. raisins
3/4 C. dried cranberries, chopped into small pieces
2 C. flour
2 1/2 C. rolled oats

What You Do

Cover raisins with boiling water and let sit for 15 minutes to soften. Drain well.

** This is a very important step for chewy cookies. Don't skip this step.

Preheat oven to 375 degrees F.

Blend together shortening and sugar. Add eggs, one at a time, mixing thoroughly after each one. Add vanilla and salt; mix well to incorporate all ingredients.

Add raisins and cranberries to dry mix; stir to coat with flour.


Dissolve baking soda in milk.

Add flour mix alternately with milk into the shortening and sugar batter; mix well.

Stir in rolled oats - at this point if you don't mind using your hands, I've found that this is the easiest way to mix everything together. If you prefer not to use your hands, you can use a big wooden spoon or a heavy-duty mixer.

Scoop onto baking trays by heaping tablespoons. Flatten each cookie slightly because they really don't flatten during baking.

Bake for 12 - 15 minutes or until the cookies are light brown. Let cool on the pans for 3 minutes before removing to cooling racks.

These cookies can be frozen by stacking in-between layers of waxed paper. They also hold up well to be shipped through the mail.
