Serve these muffins as a quick, on-the-go breakfast, a lunchbox treat or an after school snack. There's so much flavor packed into these little snacks that your kids won't even know that they are eating something with a vegetable in them!
What You Need
3 cups all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1 1/2 tsp. cinnamon
2 cups sugar
4 eggs
1 tsp. vanilla
1 cup oil
2 cups finely grated zucchini
1/2 cup raisins, chopped into small pieces
1/2 cup chopped pecans or walnuts (optional)
1/2 cup mini chocolate chips (optional)

What You Do
Preheat oven to 350 degrees F. Lightly coat mini muffin tins or use mini
tin liners.
Sift the first 5 ingredients into a medium-sized bowl and set aside.
Into another bowl, add sugar, eggs & vanilla. Beat together with an
electric mixer until blended. Slowly add vegetable oil and continue
beating until thoroughly blended. Stir in the grated zucchini and
chopped raisins. Stir in dry ingredients and mix until well blended.
**At this point, I divided the batter into two bowls. In one bowl I
stirred in 1/2 cup of chopped pecans and in the other bowl I stirred
in 1/2 cup mini chocolate chips. These are optional ingredients and
could easily be left out. You could also try substituting a dried fruit
mix, some chopped dates, dried cherries or some coconut. Experiment
to find your favorite mix.
Fill muffin pans 3/4 full. It is important not to fill them any higher than
that because the muffins will rise above the rim of each cup and stick
to the pan. Bake for 10-12 minutes or until the muffins are lightly
browned.
Store in a sealed container up to 3 days. These muffins freeze very well.
You can thaw them on the counter or warm them in the microwave to eat.
