You made a large pork roast for dinner and now you're left with an abundance of leftovers. Most likely your family will not be in the mood to eat the same thing again the next day. So use those leftovers to your menu planning advantage. Kick up the flavor and turn that loin into a Pork Taco dinner.
This is a great way to use leftover pork but what also work well with chicken or beef. So next time you have a large piece of meat on the menu, add this recipe as well for an additional dinner your family will love.
Taco Ingredients
2 tablespoons olive oil
1/2 teaspoon chili powder
1/4 teaspoon cumin
1/4 teaspoon onion powder
1/4 teaspoon ground coriander
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup Pico de Gallo (chopped onions, tomatoes & jalapenos available pre-packaged in deli section) for topping
Sour cream or Crema
16 ounces leftover cooked pork loin roast
Soft corn tortillas
Guacamole Ingredients
1 medium Hass avocado
1 heaping tablespoon sour cream
2 teaspoons ground coriander
1 tablespoon dried onion flakes
1/4 teaspoon garlic powder
1 teaspoon olive oil
1 Tablespoon Pico de Gallo/Salsa
1 teaspoon of lime juice
1 teaspoon celery salt
1 teaspoon ground pepper
Rice Ingredients
1 pack of Uncle Ben's Basmati Ready Rice
1/2 cup of fresh chopped cilantro
1 tablespoon butter
1/2 teaspoon lime juice
1/4 teaspoon salt
1/4 teaspoon ground pepper
Step 1 - Roast Spices
Heat olive oil in pan on medium heat, then add chili powder, cumin, onion powder, coriander, garlic powder, salt and pepper. Roast for approximately 1 minute.
Step 2 - Add Pork
Chop and add precooked (leftover) pork loin, cook for approximately 2 minutes, turn heat to low and let sit as you prepare other elements.
Step 3 - Make Guacamole
Cut and core avacado, add sour cream, ground coriander, dried onion flakes, garlic powder, olive oil, pico de gallo, lime juice, celery salt and pepper. Smash with a fork and stir for semi-smooth consistency.
Step 4 - Rice and Toppings
Open Basmati Ready Rice, pop in microwave, and heat for 90 seconds. Then add butter, cilantro and lime juice, salt and pepper...and stir.
Step 5 - Plate
*Finish pork with lime juice
*Microwave corn tortillas covered with a damp paper towel for 30 seconds
*Fill soft corn tortillas with pork, pico & fresh cilantro
*Plate with guacamole, crema/sour cream & rice
